Roasted Pineapple with Ricotta Cream

I don't currently have the ingredients on hand to make this, but I'm looking around for Easter desserts, and found it. I had totally forgotten about Ciao Italia. It's a show on PBS that my mom and I used to watch. I was searching online for pineapple and ricotta desserts, since I have both in my fridge and want to make a dessert, and I stumbled upon this recipe. I thought it might appeal to some here, so I decided to share it on the forum. I like that it uses pistachios, which are one of my favorite nuts.
