I'm looking for a basic white bread dough recipe that would be made with a 25lb bag of flour. Im using it to make pepperoni rolls that will be sold frozen and baked a later date
3 quarts water
10 lb flour
2 oz salt
6 oz sugar
3 oz dry yeast or 5 oz fresh cake yeast.
dry yeast works ok for frozen doughs.
You'll have to adjust the water for the texture you desire to accomodate the moisture level in the flour.
Let it rest 45 mins after mixing then make up shapes and freeze on a tray or in molds, defrost overnite in the cooler , proof and bake around 375.
