Yes, I roll it into a thin disc slightly smaller in diameter to the dough, and place it right on top. Cut into sections and roll up. Sometimes I sprinkle a little cinnamon on top of the almond paste because I absolutely love cinnamon and I think it enhances the flavor.So you fill your rugelach with almond paste instead of cinnamon/sugar?
A word of warning: once you've tried these, you might become addicted. They are absolute heaven!
