I have mentioned my oven fried chicken and after reading a comment by @Winterybella and the forum topics I realized although it is a baking forum it doesn't really have an are so I'll share here.
The first time I made my chicken, for every 1/2C of flour I added 1/2 tsp pepper, 2 tsp salt, and 3 tsp paprika to a bowl. I used to whisk this together but now I put a lid on the bowl and have my toddler shake it. The oven needs to be at 425 degrees according to the original recipe, but my oven (who dies on me yesterday) is a little "weird" (probably signs that it was going to die) so I just preheat it to 400 degrees.
I coat one of those rectangular glass pans in butter. Then in a shallow dish I pour a little bit of the flour mixture and coat the chicken pieces. Sometimes, I'll scoop some up from the bowl with a spoon so that my toddler can sprinkle some of the mixture over it. (Honestly, I let him do this once or twice so that he can help because I worry too much he may touch the raw chicken.) I also sprinkle just a bit of flour mixture in the bowl itself because I like to eat the little toasted pieces after the chicken is baked.
Ive always sucked at baking chicken BUT I love this because then all I have to do is leave it for half an hour, flip it, then 15 minutes, turn off the oven, then leave it for like 15 more minutes. BUT, this is because I knew my dearly departed oven well. It took me like two or three times to time it.
So, that's how I ORIGINALLY made it. I used to use Presto flour (which is self-rising flour). But now, since we've changed our eating habits A BIT, I use whole wheat flour sometimes...BECAUSE...I love using corn flour instead (NOT corn meal). I use the Amapola brand to be specific. Same procedure. My partner loves it and he doesnt even like corn flour. First time I made it he comes home and says oh good you made your chicken. I said nothing. As he ate it I asked if he liked it and he said yeah but it tasted a bit different and the texture was a bit different too. I said I did something different and would go back to myoriginal version buthe told me not to because he liked it more. LOL
When I'm out of cornmeal and flour (which is rare but does happen), I'll use crushed Cheerios. Once I used crushed Doritos, but cornmeal is still our favorite.
