Troubleshooting Florentine Recipe

Ive been making the same Florentines for years, suddenly today I made the mixture and now they are not flattening. I don't know what I did wrong or how to fix it!

I have to bring them to an office party tomorrow...

Going to need a little more to go on here... what recipe did you use? Did you use different ingredients to previously? Are you using a sugar thermometer?

Possibly used the wrong kind of flour?
