The Cookie Recipe that saved my business

In April of 2023, I quit my job to focus on my dreams of baking for a living. At this point I had done cupcakes, cakes, and some cookies (Mainly cupcakes). I was setting up at every local event I could - Farmers Markets, Festivals, baseballs games, you name it. I wanted to prove my husband wrong in the worst way. It took off and I was making stuff for all my friends and family. I quickly thought to myself "I should have done this sooner".

The following year I was dying to get out of the house and start making money. Winter took a big mental toll on me. I did just OK at all the events and that is how it said unfortunately. I never could hit those same numbers. I think people supported me in the beginning to be nice (I did not realize this). What I thought was growth was actually just friends and family doing more work than I was, to tell all their friends and family to support me. At the end of the 2024 season my husband came to me and asked If I just wanted to get another W-2 job. I hated the thought of it, but he was right. I wasn't making this work. I had stopped posting on social media (actually deleted my Facebook page out of frustration. After he said that, I had pretty much given up all hope.

November I had a new job, still day dreaming about baking and thinking "what am I crazy? I can't make it work". All my new co-workers were great and always told me I could try it again on the side. December 14th was our holiday party at work. My manager told me they would hire me to make the cookies, cupcakes, and cake pops. I was thrilled to do it. 50 Cookies, 50 Cupcakes, and 40 Cake pops.

My manager expressed to me how much he loves Levain Bakery's Cookies when I asked what kind of cookies to make. Literally the only kind of cookie I have ever struggled with. Tall cookies were not my thing. I tried 10 recipes that weekend. None of them were good. Most not even baked all the way. Out of frustration I paid of a cookie recipe online (something I swore I would never do).

The cookies were perfect. Literally perfect. Visually, texturally, and the taste... Dont even get me started. The best. The Cookie were a hit to say the least. I had 5 orders for more that week. My husband started posting them online for me, without me even knowing. He got orders. I was getting orders. I felt like someone just gave me the winning lottery numbers.

Fast forward to now - I am selling an average of 220 cookies a week. Friends of friends are texting me, teachers I had 15 years ago are reaching out on Facebook. I feel like the luckiest person in the world.

I am getting to the point where I either have to quit or Hire part time help. My bakery is in my garage (we are zoned highway commercial). I would be scared to have a stranger in my garage, but I am also scared to quit my job and have the same thing happen again. What would you guys do?

buy a bigger mixer, it shouldn't take a lot of time to make 200-300 cookies.
and thats nowhere near the volume to pay a helper or even need one.
Its a 2 or 3 hr chore with a 20 quart hobart, I see them used as low as $1000.

20 qt commercial 120v Hobart, $1000 on Facebook in Bangor Maine.
