A friend of mine has recently converted to a vegan diet, so I made these for her at the weekend. They were delicious! Completely not healthy at all, but egg and butter free.
Here's the recipe (makes 8 blondies):
¾ cup creamy peanut butter
⅓ cup coconut oil, melted
1½ cup brown sugar
¼ cup unsweetened almond milk
2 tsp vanilla extract
1 cup plain flour
½ tsp salt
½ tsp baking powder
A handful of dry roasted peanuts, chopped
A handful of dark chocolate chips

I substituted the half cup of Stevia for one cup of brown sugar, and I was a little more liberal with the nuts and choc chips on top!

The result (after testing, naturally!):
It was extremely tasty! We had them with vegan ice-cream
