Sourcing restaurant equipment in London for US-based cooking show

I’m working on a US-based cooking show shooting in London right now and am having the hardest time sourcing equipment. We had carnets full of stuff shipped over from the states and the biggest problem is that our sheet trays don’t fit the rented speed racks here. Can any bakers with experience abroad help? I need to buy all new sheets but it doesn’t look like full sheets exist here. I’ve also been told by a local chef that there’s a distinction to be made between UK and Euro-sized speeds, and that the Euro ones will fit both sheets (which I understand are called baking trays here) and hotels. Please help!

Also, any bakery or patisserie recs for my days off are welcome!

I understand the challenge with mismatched equipment. In the UK, sheet trays and racks differ from those in the US, and Euro-sized racks might be a good fit for your trays. Try checking out Nisbets or CATERINGAPPLIANCE.COM for equipment, and you might also find local restaurant supply stores helpful.
