I got a flavor suggestion of raspberry cheesecake cookies. My first idea was to take a banana pudding cookie recipe that I use that includes chopped nilla wafers, white chocolate chips, and dry instant banana pudding mix. I was planning on swapping the following:
-the nilla wafers for cinnamon graham crackers
-banana pudding for cheesecake flavored pudding
I’m curious if I should take the safer route by using freeze dried raspberries or if I could somehow incorporate frozen raspberries as long as it wasn’t too much. What are your thoughts on this? :)

I think you are right to be cautious about the fresh berries! Too much water in them-I would probably pipe a little raspberry jam or compote into the baked cookies-a glaze made with pulverized freeze dried raspberries, confectioners sugar and milk or water would be great too!

Freeze dried fruit sometimes has a chewy texture in baked goods, and can absorb moisture in the dough-but it may work well, won't know until you try it.
