So a few years back I would use this one recipe I had found online for Pumpkin Chocolate Chip Cookies. It was a fairly basic recipe and despite it calling for minimal pumpkin (I want to say 2-4 tablespoons), and it would yield about 3 dozen cookies. It was a wonderful recipe and it was an amazing way to use any left over pumpkin that I had from other recipes. It was also perfect when the holidays started to roll around and I would give them out as small gifts to friends and family.
Unfortunately, I have lost this recipe and I was wondering if anyone by chance knew this recipe? Or perhaps have a Pumpkin Chocolate Chip Cookie recipe, for left over pumpkin, of their own that they'd be willing to share? Any and all feedback will be greatly appreciated!
