I baked some oatmeal and raisin cookies last night for my hubby - he's recovering from having his tonsils out on Wednesday, so I wanted to make him a nice treat! They are really yummy, so I thought I'd share the recipe here! It's taken from The Hummingbird Bakery Cookbook:
270g butter
160g caster sugar
160g soft brown sugar
2 eggs
0.5 tsp vanilla extract (I used vanilla bean paste)
1 tsp salt
380g plain flour
1 tsp bicarbonate of soda
0.5 tsp cinnamon
110g rolled oats
220g raisins

- Cream together the butter and sugar until light and fluffy
- Add the eggs one at a time, mixing well after each one
- Add the vanilla extract, salt and cinnamon, mix well, then add the flour and bicarb of soda and stir together until well combined.
- Add the oats and raisins.
- Spoon on to a lined baking tray, and bake for 12-14 minutes at 170C (fan).
- Cool on a wire rack and try not to eat them all at once!
