This recipe is for those of you who use a breadmaker. It will work with any brand of machines, just add the ingredients in the order your breadmaker requires them. You can also make this bread by hand, just combine all the dry ingredients in one bowl thoroughly, then add the liquid and mix thoroughly. Bake at 350º F (175 degrees C) and bake until golden.
1 cup water
1 1/2 Tbsp. honey
1 1/2 Tbsp. canola oil (or any mild tasting oil you prefer)
1 Tbsp. all-fruit apricot preserve
1 cup whole wheat four
2 cups all purpose flour
2 tsp. vanilla extract
2 tsp. almond extract
3 Tbsp. regular milk or soy milk (if you are vegan)
1/2 cup (4 oz) chopped unsulphured dried apricots
1/2 cup chopped walnuts or pecans
1 1/4 tsp. salt
*1/2 tsp. liquid lecithin
*2 Tbsp. gluten flour
Note- The 2 ingredients marked with the asterisk are supposed to make the bread chewier.
Put all the ingredients in the breadmaker in the order your product requires them to go. Some machines want the liquids first and then the dry ingredients on top. Set it for dough. When the dough is ready, put it in a greased pan. Bake in a regular oven at 350º F or 175º C until golden.
Makes a 1 1/2 pound loaf.
