I wanted something new for dessert on Easter Sunday. I really did not want one of the usual baked items,, cake, pie, ect. I came across a recipe for a No Bake Eclair Cake. It was so quick and easy I know I will be making it again. Plus my whole family loved it.
No Bake Eclair Cake
1 pkg instant vanilla pudding
1 1/2 cups milk
1 container cool whip
graham crakers
1 can of chocolate frosting or 1 recipe chocolate frosting
Mix pudding with milk and let it sit until it thickens.
Stir in container of cool whip
Line 8x10 pan with graham crackers.
Cover with half of cool whip/pudding mixture.
Add another layer of graham crackers
Cover with remaining cool whip/pudding mixture.
Let sit in refrigerator until firm.
Soften canned chocolate frosting in microwave, or make chocolate frosting just a little bit thin so it is spoonable
Drizzle frosting over top of "cake" and leave it in refrigerator several hours or until firm.
Cut into squares and enjoy.
I used sugar free pudding, sugar free cool whip and chocolate graham crackers.
