Need ideas for make-ahead brunch treat to serve at room temp

Looking for a brunch treat (e.g. muffin, cinnamon roll, quick bread, etc.) that can be made as much as possible (ideally entirely) in advance and will taste good when served at room temperature.

I will be taking it with me to a class and leaving 2-3 hours before it will be served, with no opportunity to warm it up.

Bonus points for something that looks impressive, tastes amazing, and incorporates fall flavors (such as pumpkin or apple).

I liked those because to me they are great options for a filling breakfast on the go :) Or lunch, since in the Netherlands eggs are eaten for lunch.
