I did this Lorraine Pascale recipe last week for vegetarian Wellingtons - here's the recipe:

I was really pleased with how they turned out! I've never made pastry with spelt flour before but it was really nice.
I found that the pastry made two large-ish pasties, and I used about half the filling. I've frozen the rest. My only complaint would be that the pie filling is a little dry, so it really needs gravy with it (we had meat gravy, not the one in the recipe as it looked really sweet). I think in future I'd mix a little gravy with the filling before baking them. Here's a photo! We had them with lots of kale:
