I baked these cakes this evening. Cooled the the tins just over an hour on an elevated cooling rack. Then turned out on the flat cutting mats. That’s when I remove the baking paper. Then I let them cool completely before I wrap them in plastic wrap.

I forgot to mention you should not put your cakes in the refrigerator before it is iced as it will dry out. Wrap it tightly in plastic wrap and either freeze it or leave it on the counter overnight. The cake will be fine up to two days at room temperature. Freezing a cake will not hurt it at all. In fact freezing a cake usually improves the moisture content.
