Looking For Info On A Croissant

Hello,
First post, brand new member.
I'm sure I will have other inquiries in the future in the forums, but for starters I will ask about this...
There is a bakery at the corner of the street where my grandparents lived and my mom and uncle grew up. Our family always enjoyed items from this bakery for decades and then the original owner passed away and they sold the store to some people. My grandmother, a very picky, wealthy Sicilian woman who cooked and baked very well wouldn't even buy from the bakery except for two things that were still very delicious one were their water bagels and the other is the family favorite, a large croissant, not crescent shaped, but straight, very shiny deep golden brown egg washed exterior but soft not crunchy at all. When you sliced it open lengthwise and opened it up it was a tender yellowish dough with very finely diced white onions and poppy seeds. The roll was also hollow, no layers of dough filling the space inside. They were perfect for a tuna salad sandwich or just toasted with butter and or cream cheese or whatever you wanted to use them for.
My question is, do any of you know of this style Croissant and I would love the recipe so I can bake my own.
I've searched the internet and found nothing. I got close with one website or YouTube video but it wasn't the same.
I'm thinking it may be proprietary to this bakery. I've never seen them anywhere else in my 59 years and my 84 year old mom who as a little girl been enjoying them until 15 or so years ago. I really want to make them for her to enjoy in her twilight years.

Any help is greatly appreciated and thanks in advance for your time reading this and for any replies

its just a regular croissant with filling,
they're hollow because the filling made the insides collapse. It can be prevented but if you like it then leave it alone.
Onion and gruyere would be my choice.

Pick almost any recipe off youtube, Bennys baked are good.

So, there is no mystery to this type of croissant? That's good to know. I guess I need to start trying recipes to see if I can find one that produces the results I am looking for.
