Lemon juice in cheesecake?

I have been making homemade cheesecake for years but I just recently learned something. Most recipes now call for lemon juice. I don't understand why or what the point is. Can anyone enlighten me on this?

Yes, it makes the pie taste better, it has something to do with the acid and hos it contrasts with the other flavors. I personally love the taste! But I guess it is optional, not for me tho ;)

Hmm...I haven't used lemon juice in mine- perhaps it is something with the acid balance though? Now I'm curious.

Lemon juice heights then flavor. I add lemon juice to my homemade salad dressing. I also use lemon juice instead of salad dressing,. I used sprinkle a little on baked fish right before I serve it. Lemon juice (actually freshly squeezed lemon) really brings out the flavor of fish tacos.
