Italian Egg Biscuits

I have tried many with the same results. I am looking for a Recipe fir Italian Egg Biscuits that comes out domed with a soft crumb. Most that i have tried seam to flatten out or are not soft in texture?

ITALIAN egg COOKIES
Recipe makes about 3 dozen cookies.
Preheat oven to 375° F (100 C)
Cookie Dough:
3 cups flour (360g)
3 teaspoons baking powder (12g)
pinch of salt

1/2 cup vegetable oil (120ml)
1/2 cup sugar (100g)
3 eggs
1/2 cup milk (120ml)
1 teaspoon vanilla extract (5ml)

Mix the first 3 dry ingredients in a large bowl and set aside.

Mix oil, sugar, eggs and vanilla extract in a separate bowl with an electric beater or blender for one minute.
Add milk and blend for only 2-3 more seconds.
Stir the liquid mixture into the large bowl with dry ingredients.
Drop by teaspoonful onto ungreased cookie baking sheets.
Bake 8-10 minutes. 375F.

mix lemon juice and powdered sugar for a glaze.

Can i use Parchment paper or silpat mat
