I used to love fig rolls when I was a kid (the shop-bought kind), and recently I decided to have a go at making some at home. I'm very glad I did
Here's the recipe I used: How to make the perfect fig rolls
Before baking (and before the egg wash and sugar sprinkled on top):
The finished article:
They were so delicious! I'm definitely going to be making these again. There isn't a lot of sugar in them either which is nice - two tbsp in the figs, two tsp in the pastry, and a little extra sprinkled on top. I made a couple of changes to the recipe - I used wholemeal spelt flour instead of the wholemeal wheat flour, and I replaced the mixed spice with half a teaspoon of vanilla bean paste. The only downside to the spelt was that the pastry was quite fragile, but it made for a very tasty result. The shortness/crumbliness of the pastry worked well with the gooeyness of the figs.
Yum
