Help with Remembering Kneaded Biscuit Recipe

Growing up, a friend of my parents would always make biscuits. I remember a few details but I can't remember or find a particular recipe for them. (I make southern style buttermilk biscuits but these particular ones were not what I make)
Here is what I remember:
-they were rolled in her hand and not cut out.
-they were cooked in a glass dish
-they were kneaded!!! Traditionally kneading biscuits more than a few times is usually a big no no, but I am confident that she kneaded these biscuits quite alot.
-I don't particularly remember them being drenched in butter like butter swim/butter melt biscuits. I want to say she used alot of oil maybe on the outside and in the pan instead???

I can't get past the kneading. What ingredient difference would cause biscuits to be kneaded? Did she use yeast?

It sounds like the biscuits you remember might have been yeast-based, as yeast doughs often require kneading and can be more forgiving than traditional biscuit dough. They might also have used oil in the dough and the pan, which could explain the different texture and the lack of heavy buttering.
