Hard cake edges

Hello! I bake often and never have this problem, however today I baked carrot cake and the edges of the cake were hard. I used light colored pans, the recipe called the oven to be 375F. That seems a bit high and could've caused the hard edges. They were not burnt, just really hard. Also I suspect using pam cooking spray could've contributed to the problem. Help please! Any insights?

375 is a bit hot.
Drop it to 350.
Wrap cool cake in plastic wrap overnite.
It should come back.
