It's true you shouldn't bake when you're tired; I've had a mishap or two with putting in the wrong ingredients, or not weighing and measuring accurately whenever I'm a bit tired and can't give things my full attention.
Yesterday, I was making a coffee cake that called for golden caster sugar, but I picked up light brown muscovado sugar instead! I didn't realize I'd done it until I was putting everything away, and I wondered how the cake was going to turn out. I need not have worried. We had some for tea yesterday and it was delicious! It added a really lovely depth to the cake, and the color was slightly darker than I got with caster sugar. I think I will always substitute the sugar in my coffee cake now.
Does anyone have any happy little accidents to share?
