So, I bought some gluten free flour that has xanthan gum already in it. I made cookies with it, but the cookies were puffed up like biscuits and had a strange texture and taste. Not very good. I have bought Immaculate Bakery cookies in the refrigerated section of Target, and they tasted delicious when I baked them, so I know it can be done. Does anyone have a special recipe?
