A little healthier than the average cupcake

I haven't sampled a ginger cake yet much more a cupcake although I had tasted a ginger macaroon which tasted much like the gingerbread. By the way, my niece is learning to make cupcakes because the cupcake is now the fashion here for occasions particularly weddings. Instead of the couple slicing the big cake and giving slices to the guests, they only make one slice for the bride and groom and the guests are given cupcakes for sampling.

Without even watching the video I know I am going to love these. When it comes to ginger in baking goods, cookies always come to mind but truth be told the last set of cookies I made came out like muffins (not ginger though) come to think of it. I need to check out this spelt flour she always speaks about.
