Wow, there are some beautiful examples there! 
I made a rhubarb and custard cake when we saw friends on Thursday, but I haven't done any other Easter baking. Saw my brother last night and made some Oreo Truffles which went down very well. They are so easy it feels like cheating! They are literally just Oreos blitzed to crumbs in a food processor, mixed with cream cheese, formed into truffles, and dipped in chocolate

How lovely! I made a double rainbow cake with a white chocolate drip and rainbow easter eggs on the top - went down a treat with the family!
