Easter baking anyone?

This year Easter crept up on me so quickly that I have not had a chance to bake anything for the holiday. The outlook for the week is not looking too good either. Have any of you had a chance to bake something for this holiday, or do you plan to? I would love to see pictures if you have anything great to share,

Well my mum has requested Simnel cake so it looks like I'll be baking one! I've never made one before, but hopefully it should be ok. I also want to bake the Pulla bread that I mentioned in a different topic, but I think I might make them the week after Easter.

Anyone got any Simnel cake tips?

It's going to be a long holiday here. Most will be home from Friday and return to work on Tuesday. I like to do something different when I have time away from work. I have no idea what I will bake but I know it will something not for Easter but because I have some time off. I would love to make some hot cross buns and I don't need the sweetness of the cross.

I hadn't planned to bake anything. Zyni mentioned Hummingbird Cake in another thread and I think that would actually be a really good one to make for Easter. It sounds light and fresh and fruity and I think it would be a hit around here with my loved ones! So I'm thinking I might give that a try.

When I was little, my granny would make an Easter coconut cake similar to this one.

Except there weren't any such think as Peeps back then, so she used chocolate bunnies.

I sure miss my granny!!!!

I made a Simnel cake in the end - it was really nice!
