That's a pretty tall order, a cake for 100 people. Maybe 3 tiers or more, which you then have to bring to the reception, so the first question would be: do they have a place for you to assemble the cake in AND will it be available during that time?
I have seen several cakes in this town where we live where they have two large sheets that were put together and then frosted to look like one big cake. And then the bride cake might have a couple small tiers. Or a cake is given to the parents which are just two small rounds or squares. The facility where the reception will be held has not been chosen yet, but if it is in the town where we live, and I think it will be, then it will have an area for cooking and large tables where I can work. But I will have to bring all of my own equipment.
Second question is: how are you transporting it and who is going to help you do it?
Transport is a problem, we would probably take a taxi. And the road to the place will be rough. This is why I am wondering if it would be worth it to decorate it at the facility but I do not think the facility will have refrigeration. I do have refrigeration in my home though.
Thirdly: Bride's input. Does she have any particular design in mind or flavor or frosting?
I HAD NOT EVEN THOUGHT ABOUT THE BRIDE!!! The groom asked us to do it! My husband has 2 years of culinary arts training but he does not bake much. I am more of the baker and so while he will help me it will mostly be up to me to make the decisions. I love the fruitcake idea! But of course I must speak with the bride - what was I thinking??? Once you know her preferences color-wise, you can make gumpaste flowers, which will keep from now until the wedding as long as you keep them in a cool, dry place where the ants won't get to them.
Yes good idea about the flowers, we have those in town too.
