Carrot cake

When making carrot cake will it come lighter if you separate the eggs, best the whites till stuff and then fold in???

I haven't tried it myself, but when I first saw it it stuck in my mind. I think you'd have better luck with a recipe designed this way instead of trying to convert an existing recipe. Carrot cake is notoriously damp and heavy!

On a personal note I always prefer lemon zest in the frosting instead of orange - it's more refreshing, and would certainly work well in a lighter cake.
