Thank u so much for all of this great info , I'm going to be interviewing bakers next week hoping to find a talented one who can introduce me into the baking world so that I can order what works best for him/her this helps me so much ..Since commercial cakes mixes are in 50 lb bags, it’s usually not economical to purchase online given the cost of shipping.
That’s why restaurants and bakeries purchase supplies through a foodservice distributor. It’s also more efficient; one stop shopping and delivery on your bake schedules.
You can look for a foodservice distributor online, including on the International Foodservice Distributors Association.

For self-service, look for foodservice distribution stores. These stores are open to the public, but carry ingredients packaged for food service (e.g., 50 lb sacks of sugar, flours, 10 lb blocks butter, etc). They also carry food containers, basic cooking utensils, and bakeware, and cleaning supplies. In the northwest there’s a chain of foodservice distribution stores called Cash and Carry. Just an aside, since you are not a baker, you should work with your head baker to determine which brand(s) mixes to purchase. If your cake recipes were developed with Pillsbury Baker Plus, and you switch to BakeMark, your cakes will not be the same. Each manufacturer sources flour from different mills. They also use different emulsifiers. And your baker may be adding emulsifiers to the cake batters as well. These variables determine the texture, taste, and quality of the finished product. So a change in mix could have an adverse impact on your cakes.
