Best carrot cake recipes?

Do you guys have any really good carrot cake recipes? I have one that I really like, but I'm looking for more to try! My favorite carrot cake lets the carrot taste shine through, without added nuts or raisins. What do you guys like?

I like its simplicity and deliciousness. Although I would recommend following the directions and using white sugar. Substituting brown sugar does not work. Additionally, the frosting recipe is not as good as nomal cream cheese frosting.

I do not have a favorite recipe but wanted to mention here that carrot cake is the only way I like cream cheese frosting. I think it is gross in every other instance.

I really like the lemon in the cream cheese frosting, it really freshens it up! The cake itself is incredibly moist and delicious. I usually only make the two-tier version as it is pretty high in calories!!

I agree with Jennywren. Carrot cake must be smothered in cream cheese frosting. I make my frosting with vanilla bean flakes. I recently saw a carrot cake recipe in a magazine touting it as low fat. They accomplished this by removing the nuts. I have issues with this as that is one of the redeeming health qualities of the cake.
