Anyone has a "delicate" banana cupcake recipe?

I have some overripe bananas and I wondered if it was possible to have a fluffy, light and delicate banana treat out of it. I look up for recipes, but most of them look heavy and moist. Does anybody know if it's even possible to make something not too heavy out of my bananas?

I found this simple recipe on www.reciping.com and thought I would share it with you; straight forward and easy to do.

Main steps
Ingredients
  • Sugar: 1 1/2 cups
  • Shortening: 1/2 cup
  • Salt: 1/2 teaspoon
  • Eggs: 2
  • Flour: 2 cups
  • Soda: 3/4 cup
  • Vanilla: 1 teaspoon
  • Baking powder: 1 teaspoon
  • Bananas (mashed): 1 cup
  • Sour milk: 1/4 cup
Lemon-banana frosting.

Secondary steps
Ingredients
  • Butter: 5/16 cup
  • Lemon juice: 1 tablespoon
  • Powdered sugar: 2 cups
  • Bananas (mashed): 3 tablespoons
Cream shortening and sugar. Incorporate eggs and mashed bananas. Sift the dry ingredients together and incorporate to the bananas mixture, alternating it with the sour milk. Incorporate vanilla. Bake at 375° in muffin pans.

Frost the frosting, cream the ingredients together and mix till smooth. Distribute cupcakes while still warm.
