Any good ginger cookie recipes?

Does anyone have a good, tried and tested recipe for crunchy ginger cookies? I'm fed up with the shop bought varieties and want something with bite that will go just fine with a cup of coffee. What would be really good is a basic cookie recipe that can be adapted for a variety of flavours as my husband really likes chocolate chip.

I like allrecipe.com. They have really high rated recipes. When I run out of my own ideas I usually go on there. You should check out the website when you get a chance.

Grasmere gingerbread is absolutely to die for. The shop is teenie tiny and is in the middle of the Lake District here in the UK, and the people working there still dress like Victorians! I really want to give this recipe a try, Grasmere gingerbread has a very strong ginger flavour and is quite chewy.

I made some Jamaican Ginger Snap Cookies many times. I made some for my boyfriend and me. When I made minds, I actually used the real ginger root and smashed it up very fined. The cookies came out pretty good. They were crunchy and the ginger flavor was amazing. Some people use the ginger powder instead, but I never tried it. Here is the site I got my recipe from.
